Merlot wine comes from the merlot grape and makes a medium to full bodied wine that's easy to drink. This is due to the low tannins in the grape which help give the wine a smooth velvety feel with a low acidity and therefore it has a sweetness that tannins normally cancel out in higher tannin wines.

The flavours can vary depending on the climate the grapes are grown. 

Warmer climates give red fruit flavours like strawberry, cherry and raspberry mixed with chocolate and some spices like clove. 

Cooler climates tend to product a merlot with flavours of blackberry and blackcurrant with hints of tobacco, and an earthy tone.

Merlot also works really well when oaked, so try adding 15-30 grams of oak chips at the same time as you add your yeast and get those extra buttery, vanilla woody tones from the oak.  It also adds some extra tannins so helps hide some of the sweetness that merlot is known for.

Merlot is a great wine to drink on its own or with food.  It's a very versatile style of wine that pairs really well with a large variety of foods.
