Shiraz is a new name that has been created since the introduction of the Syrah grape to Australia.  In France Shiraz is still called Syrah.  Another really popular wine worldwide and grown worldwide, Shiraz has come to be the new name for the new style of warmer climate Syrah wine.  Shiraz is fruitier, more lush and richer than the traditional French Syrah.

You can expect a full bodied, dark red wine that's full of jammy fruity flavours of blackberry, blackcurrant and blueberries, but with some olive, pepper and liquorice. The high levels of tannins help make a smooth, dry wine.  A higher alcohol level of 13-15% helps to balance out all the strong flavours.

Serve at 15-18°C or the high alcohol content can come through as heat.

This is another red wine that works well when aged in oak, so feel free to add 15-30 grams of oak chips at the same time you add your yeast to give extra flavours of vanilla, butter and spices like clove.
