Water is a large ingredient when brewing, be it beer, wine or lager, adjusting your water can massively effect the finish of your final beer or wine.
In hard water areas, the calcium dissolved in the water can interact with the acids and cause beers and wines to lack zing, where as in very soft water areas, too few minerals can make the beer or wine too acidic.
So knowing the type of water you have is useful, so you can adjust it to suit the type of beer or wine you are brewing.
Some beer styles need hard water to pull the flavours from the hops, but some other styles benefit from being brewed with softer water.
